The Italian word 'norcino' (pork butcher/charcutier) literally derives from this town's name, and Norcia's butchers were so renowned that they became Europe's first surgeons in the Middle Ages. Main products include black truffles (tartufo nero), cured meats (norcineria), wild boar salami, and prosciutto di Norcia IGP.
